Ingredients
for the roasted meat
2 clove(s) garlic, crushed
1 piece(s) onion, chopped
2 piece(s) scallion stalks, chopped
1 tbsp salsa negra (Worcestershire-style sauce)
1 piece(s) glass of red wine
1/2 tbsp chopped oregano
1 tbsp chopped parsley
1 tbsp vinegar
pinch salt and pepper to taste
1000 gr beef (leg, rump, rib eye)
1000 gr pork
1/2 cup(s) water
for the pie
250 gr white threshed corn
1/2 cup(s) fresh cuajada, ground
pinch salt to taste
1 cup(s) uncooked rice
1/2 cup(s) green peas, tender and cooked
2 piece(s) large potatoes, peeled and cut in pieces
250 gr longaniza sausage, cut in pieces
Directions
  1. Start by soaking the corn 2 days in advance in a large container with enough water to cover it. After this time, wash and cook over medium heat in clean water for 1½ hours or until tender.
  2. Once ready, let it cool, drain, and pass through the grinder
