12 cup(s) water
1 cup(s) hogao
500 gr potatoes, peeled and chopped
2 piece(s) eggs
1 cup(s) milk
1 piece(s) scallion stalk, finely chopped
1 tbsp chopped cilantro
pinch salt and pepper to taste
Directions
  1. Cut the criadillas in thin slices and put them to cook over high heat in the water with hogao, salt, and pepper for 30 minutes.
  2. After this time, add the potatoes, lower the heat to medium, and let everything cook for 30 more minutes.
  3. Then lower the heat to minimum, beat the eggs with the milk, and add this mixture to the broth. Leave for 5 more minutes on the heat and serve hot, sprinkling with cilantro and scallion.
