Directions
- Cut the criadillas in thin slices and put them to cook over high heat in the water with hogao, salt, and pepper for 30 minutes.
- After this time, add the potatoes, lower the heat to medium, and let everything cook for 30 more minutes.
- Then lower the heat to minimum, beat the eggs with the milk, and add this mixture to the broth. Leave for 5 more minutes on the heat and serve hot, sprinkling with cilantro and scallion.
