Trout with Shrimp and Olives

gr olaci (wild spinach)

Directions
- Clean the trout, scale it, remove the innards and fins, wash it and dry it thoroughly.
- Clean the olaci, wash them quickly under running water, dry them and chop them coarsely.
- Butter a baking pan and cover the base with the chopped olaci; place the trout on top, pour the brandy and white wine over it, then season with salt and freshly ground pepper; cover the pan with aluminum foil, place it in a preheated oven at 170 °C and cook for about twenty minutes.
- In the meantime, shell the shrimp; wash them, drain them, dry them, cut them into rounds and put them in a saucepan with a little oil.
- Brown them for two to three minutes, stirring often with a wooden spoon; drain them and set them aside.
- When the trout with olaci is cooked, place everything on the serving dish and then add the shrimp.
