Trout with Shrimp and Olives

Ingredients
1 piece(s) salmon trout of about 900 g or 2 small ones
300 gr olaci (wild spinach)
1/2 cup(s) dry white wine
250 gr shrimp
20 gr butter
1.5 dl extra virgin olive oil
pinch salt
pinch peppercorns
Directions
  1. Clean the trout, scale it, remove the innards and fins, wash it and dry it thoroughly.
  2. Clean the olaci, wash them quickly under running water, dry them and chop them coarsely.
  3. Butter a baking pan and cover the base with the chopped olaci; place the trout on top, pour the brandy and white wine over it, then season with salt and freshly ground pepper; cover the pan with aluminum foil, place it in a preheated oven at 170 °C and cook for about twenty minutes.
  4. In the meantime, shell the shrimp; wash them, drain them, dry them, cut them into rounds and put them in a saucepan with a little oil.
  5. Brown them for two to three minutes, stirring often with a wooden spoon; drain them and set them aside.
  6. When the trout with olaci is cooked, place everything on the serving dish and then add the shrimp.
