500 gr papas pastusas, peeled, cooked and diced
2 cup(s) cooked rice, dry
4 piece(s) green plantains, peeled, cooked and mashed
4 piece(s) hard-boiled eggs, chopped
2 cup(s) refrito [see p. 50]
2 cup(s) coconut milk

Directions
  1. Remove the shell from the turtle, clean, cut into pieces and cook in water for 2 hours.
  2. Remove and sauté in the refrito for 15 minutes.
  3. Add the potatoes, rice and part of the plantain masa, mix, incorporate the coconut milk, eggs, salt, pepper and cumin.
  4. Prepare the shell by covering the holes of the extremities and edges with the remaining mashed plantain.
  5. Pour the entire preparation into the shell and bake in a preheated 300° oven for 30 minutes.
