Torta de Ullucos Cauca (Ulluco Casserole)

Ingredients
1 kg ullucos
2 tbsp hogao (Colombian tomato-onion sauce) [see p. 253]
4 piece(s) eggs, beaten
250 gr white cheese, grated
2 tbsp wheat flour, dissolved in milk
1 tsp baking powder
1/4 cup(s) natas (cream)
2 cup(s) milk
pinch pinch of thyme and oregano
pinch salt and pepper to taste
Directions
  1. Cook ullucos for 25 minutes.
  2. Cut in rounds, put in a container with rest of ingredients and mix very well.
  3. Pour everything in a greased mold and bring to preheated oven at 300°, for 20 minutes or until knife test passes. (Optional: can cover with grated toast and butter pieces).
  4. Note: As general rule, way to check if a cake is cooked is by inserting a knife in the middle, and if it comes out clean it's a sign it's ready. 258
