Ingredients
1 corn
1 pork loin
2 oregano
4 sweet peppers
1 sprig(s) celery
1 head(s) garlic
2 salt
¼ carrot
1 sprig(s) parsley
1 achiote
2 lard
leaves plantain
strips of tollo (shark)
pepper to taste
Directions
  1. First, cook the meat with enough water, then add the celery, oregano, garlic, parsley, and salt.
  2. Then strain the masa with a head of garlic and salt.
  3. Cook the masa with a little bit of broth from the cooked meat.
  4. Season the meat with onion and achiote.
  5. Then place the roasted and cleaned leaves and roll and press well onto the leaves and add the meat, carrot, and cilantro.
  6. Afterwards, wrap them, tie them, and cook over high heat for half an hour in a pot with boiling water.
  7. Makes 75 tamales.
