pinch salt, annatto, pepper and cumin to taste
Directions
- Cook the green plantains for 20 minutes, then mash them and season with salt, annatto, pepper and cumin to taste.
- Separately fry onion and pork skin to make chicharrones. From the lard (concho) obtained from this frying, add 2 tablespoons to the plantain puree.
- Knead the plantain with lard and chicharrón pieces, and before the mixture cools form medium balls. Another way to prepare them consists of adding a stew of tomato, onion and bell pepper to the plantain puree and chicharrones. Cheese cubes can also be added to the mixture. Once the balls are made, they can be taken to the oven to brown a little.
