Ingredients
12 cup(s) caldo básico [see p. 78]
500 gr potatoes, peeled and chopped
2 cup(s) cooked and ground rice
1/2 cup(s) milk
2 piece(s) beaten eggs
2 tbsp cilantro (or parsley), chopped
pinch salt, pepper, cumin and achiote (or color) to taste
oil
Directions
  1. Bring the broth to a boil with the potatoes and color until tender (20 minutes).
  2. Separately, mix the rice, eggs, milk, salt, pepper and cumin, beat well, take spoonfuls and fry until golden; add to the broth, cook for 10 minutes and serve with cilantro (or parsley) sprinkled on top.
