gr red potatoes, peeled and diced

tbsp hogao [see p. 87]

tsp cilantro, finely chopped
pinch salt and pepper to taste
Directions
- Bring the broth to a boil.
- Remove the bone used to prepare it; chop the meat finely and sauté with the hogao.
- Put the potatoes and meat in the broth and cook for 20 minutes, then add the noodles, salt and pepper, and cook for 10 minutes.
- Serve with cilantro sprinkled over each portion.
