Ingredients
500 gr smoked tripe
1 piece(s) large green plantain
1 piece(s) small yuca cut into pieces
4 piece(s) medium potatoes
1 piece(s) large green banana
3 piece(s) green primitivo, murrapo or bocadillo plantains
1 cup(s) vinegar
250 gr coastal cheese cut into small cubes
pinch achiote or color to taste
pinch wild cilantro to taste
pinch salt to taste
Directions
  1. Bring water with vinegar to a boil. When it reaches a boil, remove from heat and wash the tripe well in this mixture.
  2. Replace the water with vinegar with clean water, then drain the tripe and, with water at a level that covers them, cook them in a pressure cooker until they soften. Remove the lid to add the other ingredients, except the cheese and cilantro.
  3. Put the pot on the heat and let it cook for 10 more minutes. Remove and let rest.
  4. Add cheese and chopped cilantro, and serve accompanied with banana and avocado.
