gr smoked tripe

gr coastal cheese cut into small cubes
pinch achiote or color to taste
pinch wild cilantro to taste
pinch salt to taste
Directions
- Bring water with vinegar to a boil. When it reaches a boil, remove from heat and wash the tripe well in this mixture.
- Replace the water with vinegar with clean water, then drain the tripe and, with water at a level that covers them, cook them in a pressure cooker until they soften. Remove the lid to add the other ingredients, except the cheese and cilantro.
- Put the pot on the heat and let it cook for 10 more minutes. Remove and let rest.
- Add cheese and chopped cilantro, and serve accompanied with banana and avocado.
