Ingredients
1 ground chayote
3 pork fat
1 achiote
½ finely chopped potato
1 finely chopped onion
2 finely chopped garlic cloves
1 finely chopped sweet pepper
1 small roll of cilantro
½ ground pork
salt and pepper
Directions
  1. Cook the chayote, drain it and chop it into cubes, mix them.
  2. Cook the potato and chop it into cubes, mix them.
  3. Cook the meat and grind it.
  4. In a pan, fry the meat, aromatics, achiote, fat, and seasonings.
  5. Once ready, add it to the chayote and potato and mix.
  6. Place the picadillo in a baking dish and bake at 350° F for 15 minutes.
  7. Remove from oven, sprinkle with cilantro, and serve in gallos.
