Directions
- Cook the chayote, drain it and chop it into cubes, mix them.
- Cook the potato and chop it into cubes, mix them.
- Cook the meat and grind it.
- In a pan, fry the meat, aromatics, achiote, fat, and seasonings.
- Once ready, add it to the chayote and potato and mix.
- Place the picadillo in a baking dish and bake at 350° F for 15 minutes.
- Remove from oven, sprinkle with cilantro, and serve in gallos.
