500 gr pork ribs, chopped
4 piece(s) chorizos (Colombian pork sausages), broken
2 clove(s) garlic, finely chopped
3 piece(s) whole green onion stalks
2 piece(s) ripe tomatoes, peeled and chopped
2 piece(s) green plantains, peeled and broken by hand
500 gr yuca (cassava), peeled and broken
250 gr arracacha (Andean root), peeled and chopped
2 piece(s) corn cobs, broken into pieces
250 gr small potatoes, peeled
3 piece(s) cabbage leaves, chopped
1 piece(s) white onion
1 piece(s) ripe plantain, chopped into pieces with skin
125 gr soaked chickpeas
125 gr ahuyama (Colombian pumpkin)
1 piece(s) grated carrot
1/4 cup(s) washed rice
1 1/2 cup(s) chorotas (optional) [see p. 286]
pinch salt, pepper and cumin to taste
2 piece(s) tablespoons of cilantro, finely chopped
Directions
  1. Cook meats in water with salt.
  2. Add plantains, yuca, potatoes and other vegetables.
  3. Season and simmer until tender.
  4. Serve hot with rice and avocado.
