Directions
- Prepare black coffee in advance, fillet the chicken, and marinate with the cold coffee.
- Cook the tacaco in advance.
- In a suitable pan, place the chicken fillet and cook over low heat.
- In a suitable container, cook the passion fruit, add sugar and cream, and finally the papaya.
- Make a puree with the ñampí and plantains.
- On a plate, arrange the puree, followed by the chicken, and finally the tacaco, and cover with the sauces.
- Garnish with ñampí.
