Ingredients
150 chicken breast fillet
50 sweet cream
50 coffee
3 salt
30 onion
55 papaya
5 celery
1 tacaco (taro root)
35 ñampí (yam)
35 green plantain
1 clove(s) garlic
¼ passion fruit
25 sugar
¼ green plantain
Directions
  1. Prepare black coffee in advance, fillet the chicken, and marinate with the cold coffee.
  2. Cook the tacaco in advance.
  3. In a suitable pan, place the chicken fillet and cook over low heat.
  4. In a suitable container, cook the passion fruit, add sugar and cream, and finally the papaya.
  5. Make a puree with the ñampí and plantains.
  6. On a plate, arrange the puree, followed by the chicken, and finally the tacaco, and cover with the sauces.
  7. Garnish with ñampí.
