Ingredients
3 and a half of corn
3 meat
3 leaves
1 carrot
3 sweet peppers
1 head(s) garlic
1 large onion
5 cilantro
salt, pepper, lard
and achiote to taste
burlap strips to tie the tamales
Directions
  1. Cook the corn, then grind it, strain the masa, and let it settle until the next day.
  2. Then pour out the water until you can see what has settled.
  3. Put the meat to cook with a head of garlic and salt.
  4. Cook the masa with a little bit of broth from the cooked meat.
  5. Season the meat with onion and achiote.
  6. Then place the roasted and cleaned leaves and add the meat, carrot, and cilantro.
  7. Afterwards, wrap them, tie them, and cook over high heat for half an hour in a pot with boiling water.
  8. Makes 75 tamales.
