Pollo Enjarrado (Chicken in Plantain Leaves)

Ingredients
1 whole chicken, cleaned and well washed
4 hard-boiled eggs
3 medium cooked potatoes
5 garlic cloves, finely chopped
8 homemade tortillas
lard or margarine
Directions
  1. Cook the whole chicken with two packages of chicken bouillon and season with garlic, sweet pepper, and celery to taste.
  2. Drain it in a pot with very hot margarine or lard and brown with achiote.
  3. Then place it on toasted plantain leaves and stuff with the potatoes, hard-boiled eggs, and tortillas around it.
  4. This is a typical dish from our grandmothers.
