1500 gr turtle meat
500 gr turtle offal (heart, liver, etc.)
Directions
  1. Marinade: 1 cup vinegar · 2 tomatoes, not too ripe, cut in pieces · 2 bell peppers, cut in pieces · 2 large onions, chopped · 4 wild cilantro leaves, chopped · 2 tablespoons lemon juice · salt and pepper to taste.
  2. Cook the turtle meat in water that covers it for 2 hours, remove, drain and marinate with the offal in a brine of water and vinegar, salt and spices, for 2 hours.
  3. Prepare wooden skewers threading the pieces of meat, offal, tomatoes, bell pepper and onions.
  4. Grill over charcoal, turning and basting with a little marinade until browned.
  5. Serve with boiled yuca, fariña or farofa.
