gr turtle offal (organs), chopped

cup(s) guiso (stew sauce) [see p. 128]

piece(s) ripe tomatoes, chopped

Directions
- Cook the meat and offal in water that covers them for 2 hours.
- When tender, remove and chop as finely as possible, mix with the guiso and let simmer for 15 minutes over low heat.
- Serve with fariña, farofa or dry white rice.
