Ingredients
8 plátanos
1/2 chorizo no picante
1 chile dulce mediano rojo
apio, puerro, pimienta, sal, achiote al gusto
2 leaves laurel
1 sofrito grande
Directions
  1. Peel plantains and cook in salted water. When tender, drain and chop.
  2. Cook meat with aromatics until tender and chop.
  3. Heat oil and fry garlic with achiote. Add meat, then plantain.
  4. Season with bouillon, cumin, Worcestershire sauce, and salt.
  5. Let simmer over low heat.
