Directions
- Wash and peel papayas, remove seeds, then grind in processor or machine and boil 8-10 minutes.
- Peel potatoes, cut into cubes, pass through cold water.
- Cook meat with aromatics to taste, then chop.
- Chop and grind chicasquil.
- Place culantro seeds in hot water until cool, then grind.
- In pot, fry garlic until golden, then add achiote, chicasquil, culantro seeds, meat, and potatoes. Add Worcestershire sauce and finally drained papaya. Mix well, then simmer 10 minutes to concentrate flavor.
- Finally serve in previously heated tortillas.
