Picadillo de Papaya Verde (Green Papaya Hash)

Ingredients
3 papayas grandes verdes
1 papas
1 cup(s) chicasquil (opcional)
1/2 carne de cecina
ajos al gusto
3 salsa inglesa
1 achiote
manteca al gusto
1 culantro en semilla
sal al gusto
Directions
  1. Wash and peel papayas, remove seeds, then grind in processor or machine and boil 8-10 minutes.
  2. Peel potatoes, cut into cubes, pass through cold water.
  3. Cook meat with aromatics to taste, then chop.
  4. Chop and grind chicasquil.
  5. Place culantro seeds in hot water until cool, then grind.
  6. In pot, fry garlic until golden, then add achiote, chicasquil, culantro seeds, meat, and potatoes. Add Worcestershire sauce and finally drained papaya. Mix well, then simmer 10 minutes to concentrate flavor.
  7. Finally serve in previously heated tortillas.
