green papayas, grated or ground
1/2
cooked and ground cecina
culantro (cilantro), sweet bell pepper, celery, garlic, onion, salt, and achiote (annatto) to taste
black pepper and cumin
Directions
- Peel the papaya, slice it, and grind it. Wash well, boil with water and salt. When boiling, wash well and drain with a cloth.
- Sauté the aromatics and add the meat and achiote. Finally add the papaya until it concentrates and cooks well.
