Ingredients
2 green papayas, grated or ground
1/2 cooked and ground cecina
culantro (cilantro), sweet bell pepper, celery, garlic, onion, salt, and achiote (annatto) to taste
black pepper and cumin
Directions
  1. Peel the papaya, slice it, and grind it. Wash well, boil with water and salt. When boiling, wash well and drain with a cloth.
  2. Sauté the aromatics and add the meat and achiote. Finally add the papaya until it concentrates and cooks well.
