Papas Rellenas con Carne Valle (Stuffed Potatoes)

Ingredients
8 piece(s) large guata potatoes
500 gr ground beef
2 piece(s) hard-boiled eggs, chopped
1 cup(s) hogao (Colombian tomato-onion sauce) [see p. 253]
4 piece(s) eggs, beaten
2 tbsp wheat flour
pinch salt to taste

Directions
  1. Cook peeled potatoes in salted water for 25 minutes, until soft.
  2. Fry meat in a pan with very little fat, stirring; once ready conserve with hogao and chopped eggs.
  3. Cut potatoes from top removing a lid, hollow with a small spoon and fill with stew and replace lid, which can be fixed with a stick that is removed once finished with next step.
  4. Beat eggs with flour and coat potatoes, frying in enough oil, until golden.
  5. Can also be filled with grated white cheese, following same procedure.
