Ingredients
1500 gr papas sabaneras
4 piece(s) scallion stalks cut in strips
2 piece(s) ripe tomatoes peeled and chopped
250 gr grated country cheese
1/2 cup(s) milk cream
2 tbsp oil
pinch cumin, pepper and salt to taste
Directions
  1. Half-peel or partially peel the papas sabaneras and put to cook in salted water for 45 minutes until they soften.
  2. Separately prepare a stew by sautéing in oil the ripe tomatoes, scallion, grated cheese, milk cream and seasonings.
  3. Remove the potatoes, put them on a tray and bathe them –chorrean them– with the sofrito. Serve hot.
