1 kg pig head, chopped
500 gr beef foot, chopped
250 gr pork ribs, chopped
750 gr tripe
250 gr white hominy corn
500 gr chickpeas, soaked overnight
500 gr Pastusa potatoes, peeled and chopped
250 gr small macaroni pasta
1 piece(s) red bell pepper, chopped
1 tbsp achiote (annatto)
6 piece(s) wild cilantro
1 cup(s) hogao (tomato-onion sauce) [see p. 319]
pinch salt, pepper and cumin to taste
baking soda
Directions
  1. Cook all meats in water with salt.
  2. Add vegetables and legumes.
  3. Season and simmer until everything is tender.
  4. Serve hot with rice.
