- After cooking crabs, separate claws or pincers.
- Pound breaking shell with one blow, which is removed, leaving meat attached to cartilage.
- Prepare vinaigrette with lemon, vinegar, chopped scallions, crushed garlic, tomato paste, salt, pepper and hot peppers, in which to marinate claws before serving cold.
