Lengua Fingida (Mock Tongue, Original Family Recipe)

Ingredients
1 bunch culantro
1 piece(s) large pepper
2 piece(s) celery leaves
1/2 kg beef
5 piece(s) chicken bouillon cubes
2 tbsp achiote
1/2 cup(s) flour
5 clove(s) garlic
1 piece(s) large onion
1/2 kg pork
1/4 kg chorizo
1/2 cup(s) Worcestershire sauce
1 kg corn masa
pinch salt to taste
Directions
  1. Process all ingredients. In large bowl, mix meats, sauce, bouillon, salt, achiote, and other processed ingredients.
  2. Mix all ingredients until forming a dough.
  3. Form a sort of sausage. Once formed, pass through flour so it binds well. Wrap in plantain leaves and tie. Cook in boiling water for approximately one hour. Once cooked, let cool. Wrap in aluminum foil and refrigerate overnight (about 12 hours). Slice to thickness you like.
  4. Pass through beaten egg and fry.
