juice of 2 lemons

cup(s) basic broth [see p. 304]
2
piece(s) ripe plantains, peeled and cut into pieces
2
piece(s) green plantains, peeled and cut into pieces
1
cup(s) guiso (Colombian sofrito) [see p. 319]
2
piece(s) ají criollo (Colombian peppers), finely chopped
1
cup(s) coconut milk (optional)
pinch salt to taste
Directions
- Put the plantains to cook in the broth, first the green ones, and after 10 minutes add the ripe ones.
- When both are soft (about 30 minutes) add the liver, guiso, peppers and salt; let cook 15 minutes more, pour the coconut milk on top and let simmer covered for another 10 minutes on very low heat.
- Serve with coconut rice.
