2 kg smoked toyo (young shark)
same ingredients as the guiso [see p. 58]
Directions
  1. Put the toyo in warm water for ½ hour to remove some of the smoke.
  2. Remove, remove the skin, and shred the meat.
  3. Then cook with the rest of the ingredients following the same instructions as the guiso.
