2 kg guagua meat (boneless)
same ingredients as the guiso [see
Directions
  1. Clean the guagua, peel it, cut into pieces with or without the bone and marinate in cow's milk for 2 hours to remove some of the musk.
  2. Remove, dry and cook, following the same procedure as the guiso.
  3. It is also very popular to season it with salt, lime, herbs to taste and seasonings, and simply fry it and grill it over coals on a grill until golden.
  4. Serve with white rice and steamed yuca.
