Directions
- Clean the guagua, peel it, cut into pieces with or without the bone and marinate in cow's milk for 2 hours to remove some of the musk.
- Remove, dry and cook, following the same procedure as the guiso.
- It is also very popular to season it with salt, lime, herbs to taste and seasonings, and simply fry it and grill it over coals on a grill until golden.
- Serve with white rice and steamed yuca.
