Delicia de Pejibaye (Peach Palm Fruit Delight)

Ingredients
2 pejibayes (peach palm fruits)
1 can(s) evaporated milk
3 eggs
¾ sugar
1 cinnamon
½ salt
½ ginger
½ cloves
½ raisins
2 rum
115 gr butter
½ baking powder
Directions
  1. Cook the pejibayes and process not too finely.
  2. Beat the eggs, sugar and pejibayes.
  3. Then add the soft butter, salt, ginger, cloves, cinnamon, evaporated milk, baking powder and raisins. Mix well and pour into a rectangular mold.
  4. Bake for 15 minutes at 425°, then lower temperature to 350° for 30 minutes.
