cup(s) hogao (Colombian tomato-onion sauce) [see p. 401]

piece(s) hard-boiled eggs, finely chopped

tbsp parsley
2
tbsp cilantro, chopped

piece(s) lemons (juice)
pinch salt and pepper to taste
Directions
- Wash the testicles and remove the membrane.
- Cook them in enough water to cover, with salt, pepper, and lemon juice, in a pressure cooker for 45 minutes after it starts whistling.
- Remove them, let them cool, and slice into thin pieces.
- Sauté in the hogao for 15 minutes.
- Serve with cilantro, parsley, and egg sprinkled on top.
- Accompany with white rice or steamed potatoes.
