Criadillas de Cordero (Lamb Testicles)

Ingredients
1500 gr (1 1/2 kg) lamb testicles
1 1/2 cup(s) hogao (Colombian tomato-onion sauce) [see p. 401]
2 piece(s) hard-boiled eggs, finely chopped
2 tbsp parsley
2 tbsp cilantro, chopped
3 piece(s) lemons (juice)
pinch salt and pepper to taste
Directions
  1. Wash the testicles and remove the membrane.
  2. Cook them in enough water to cover, with salt, pepper, and lemon juice, in a pressure cooker for 45 minutes after it starts whistling.
  3. Remove them, let them cool, and slice into thin pieces.
  4. Sauté in the hogao for 15 minutes.
  5. Serve with cilantro, parsley, and egg sprinkled on top.
  6. Accompany with white rice or steamed potatoes.
