Ingredients
1500 gr (1 1/2 kg) meaty pork ribs, cut to taste
1 cup(s) hogao [see p. 87]
2 tbsp grated panela
pinch salt and pepper to taste
oil
Directions
  1. Marinate the ribs with the hogao and panela for 1 hour.
  2. Put to sweat in a little water until tender (for about 30 minutes).
  3. Remove, dry well and fry in not-too-hot oil until golden.
