Ingredients
2 cup(s) red beans, soaked in 1 liter of water
2 kg rabbit pieces
3 piece(s) carrots, grated
3 piece(s) scallion stalks, chopped
2 piece(s) ripe tomatoes, peeled and chopped
2 clove(s) garlic, chopped
4 tbsp butter
2 tbsp oil
2 tbsp vinegar
2 tbsp cilantro and parsley, chopped
cumin, salt and pepper to taste
Directions
  1. Cook the beans for 1 hour in the same water they soaked in (they should be soft).
  2. Separately, marinate the pieces very well with the vinegar, tomatoes, onion, garlic and seasonings.
  3. Leave for 3 hours to macerate.
  4. Remove the pieces, dry with a cloth, sauté in butter and return to the sauce with the cilantro and parsley.
  5. Mix everything with the beans, cover the pot and simmer over medium heat for 30 minutes (until the meat is tender).
  6. Serve with white rice.
