cup(s) red beans, soaked in 1 liter of water
2
kg rabbit pieces
3
piece(s) carrots, grated
3
piece(s) scallion stalks, chopped
2
piece(s) ripe tomatoes, peeled and chopped
2
clove(s) garlic, chopped
4
tbsp butter
2
tbsp oil
2
tbsp vinegar
2
tbsp cilantro and parsley, chopped
cumin, salt and pepper to taste
Directions
- Cook the beans for 1 hour in the same water they soaked in (they should be soft).
- Separately, marinate the pieces very well with the vinegar, tomatoes, onion, garlic and seasonings.
- Leave for 3 hours to macerate.
- Remove the pieces, dry with a cloth, sauté in butter and return to the sauce with the cilantro and parsley.
- Mix everything with the beans, cover the pot and simmer over medium heat for 30 minutes (until the meat is tender).
- Serve with white rice.
