Directions
- Take the moorhen and remove the viscera, feet and head.
- Prepare a marinade with lime juice, salt, vinegar, green onion, thyme and oregano. Season the moorhen with this marinade and let it sit for 1 hour.
- Cover the moorhen with fresh clay. If you prefer, do not cover it.
- Place the moorhen on a clay tray and put it in the oven at high heat (it can also be cooked in a clay pot over a fire).
- When the clay has hardened, remove the tray and break the clay.
- Serve hot.
