Ingredients
1 kg pork meat, pulp, cut in small pieces
250 gr pork fat (bacon), without skin, chopped in small pieces
1 tbsp curing salt
4 clove(s) garlic, finely chopped
3 piece(s) scallion stalks, finely chopped
pinch cumin, pepper and color to taste
thin pork casings, very clean
Directions
  1. Mix all ingredients and stir well, let rest for a while.
  2. Prepare the casings and stuff without pressing too much so they don't burst.
  3. Then separate the casing every 12 centimeters tying with string.
  4. Hang in fresh air (or above a wood stove to smoke them a bit).
  5. Unlike other sausages in the country that are fried, these are cooked in boiling water for 20 minutes.
  6. Serve with arepas and tomato slices.
