Ingredients
1 kg pork belly with thin skin
2 tbsp oil
1 piece(s) tablespoon of baking soda
Directions
  1. Cut bacon in long slices, making crosswise cuts only in fat part, without touching skin.
  2. Boil strips in water with 1/4 teaspoon baking soda for 5 to 7 minutes, ensuring skin remains submerged.
  3. Remove, drain, rub remaining baking soda into skin and sun-dry for 1 hour.
  4. Cut to desired size and fry in pan with little oil over low heat.
  5. They release their own fat, with which they finish frying; when golden and grease-free, remove, drain on absorbent paper and salt while still hot.
  6. Serve with fried patacones or chiquichoque wraps.
