piece(s) white onion, peeled and finely chopped

clove(s) garlic, ground

tsp panela (unrefined cane sugar), very finely grated (optional)
pinch salt and pepper to taste
Directions
- Cut the sirloin (one portion per person).
- Rub the pieces with lemon juice, oil, onion, garlic, salt and pepper, and let rest 15 minutes.
- Heat a clay pot over the fire and grease a little, and there cook the steaks on both sides, to taste.
- Serve on hot arepas.
