8 piece(s) small bocachico, dried and salted
3 piece(s) large white onions, peeled and sliced
3 piece(s) ripe tomatoes, peeled and sliced
2 tbsp lard (or oil)
3 tbsp lemon juice
salt and pepper
bijao leaves (or banana leaves)

  1. Soak the fish in warm water for 20 minutes to desalt it.
  2. Dry, open and rub with lemon, salt and pepper.
