Ingredients
1 piece(s) large lamb head
1 cup(s) chicken fat
2 piece(s) dark beers (1 1/2 liter)
1/2 tsp basil, chopped
1/2 tsp thyme, ground
1/2 tsp oregano, ground
2 piece(s) scallion stalks, chopped
2 clove(s) garlic, chopped
1/2 tsp achiote (or color)
pinch salt, cumin and pepper to taste
Directions
  1. Wash and singe the head, wash again and rinse until very clean.
  2. Cook in a pot (an iron pot is more suitable) with the rest of ingredients, for approximately 1 hour.
  3. Remove and chop.
  4. Serve accompanied by arepas.
