Ingredients

1000 gr beef ribs
2 piece(s) large carrots
2 piece(s) celery stalks
2 piece(s) scallion stalks
1 piece(s) large white onion studded with cloves
4 clove(s) garlic
1 piece(s) large piece of arracacha (optional)
1 piece(s) abundant bunch of herbs (thyme, rosemary, basil)
pinch salt, cumin, and pepper to taste
Directions
  1. Put all ingredients to cook, chopped in large pieces, until the meat has softened sufficiently.
  2. Strain the broth and use to prepare the different traditional soups of Popayán. Watch out!
  3. The foam that forms on the surface must be removed frequently.
