Directions
- Heat water and when it boils, add the armadillo, turning it until the shell softens. At that moment, remove it and peel it quickly.
- When the armadillo has cooled down, wash it with lime juice and cut it into pieces.
- Put the armadillo pieces to cook in water at a level that covers them, with salt to taste, for 40 minutes, until it softens.
- Add the yuca, pumpkin, green plantains, carrot, green onion segment, white onion, cilantro, salt and pepper. Leave everything cooking over medium heat for 25 more minutes.
- Serve hot.
