tbsp hogao (Colombian tomato-onion sauce) [see p. 253]

gr white cheese, grated

tbsp wheat flour, dissolved in milk

tsp baking powder

cup(s) natas (cream)

cup(s) milk
pinch pinch of thyme and oregano
pinch salt and pepper to taste
Directions
- Cook ullucos for 25 minutes.
- Cut in rounds, put in a container with rest of ingredients and mix very well.
- Pour everything in a greased mold and bring to preheated oven at 300°, for 20 minutes or until knife test passes. (Optional: can cover with grated toast and butter pieces).
- Note: As general rule, way to check if a cake is cooked is by inserting a knife in the middle, and if it comes out clean it's a sign it's ready. 258
