cup(s) hogao (Colombian tomato-onion sauce) [see p. 253]

tbsp wheat flour
pinch salt to taste

Directions
- Cook peeled potatoes in salted water for 25 minutes, until soft.
- Fry meat in a pan with very little fat, stirring; once ready conserve with hogao and chopped eggs.
- Cut potatoes from top removing a lid, hollow with a small spoon and fill with stew and replace lid, which can be fixed with a stick that is removed once finished with next step.
- Beat eggs with flour and coat potatoes, frying in enough oil, until golden.
- Can also be filled with grated white cheese, following same procedure.
