Ingredients
1 kg turtle meat, cut in pieces
250 gr turtle offal (organs), chopped
2 cup(s) guiso (stew sauce) [see p. 128]
2 piece(s) ripe tomatoes, chopped
salt
Directions
  1. Cook the meat and offal in water that covers them for 2 hours.
  2. When tender, remove and chop as finely as possible, mix with the guiso and let simmer for 15 minutes over low heat.
  3. Serve with fariña, farofa or dry white rice.
