Directions
- Soak the meat in salted water for two hours, remove and wash under running water.
- Cook for 1 hour, and when tender remove and cut into 2 cm cubes, return to the broth, add the plantains, and cook for 15 minutes; then add the yuca and chopped ahuyama with the garlic and scallion.
- Lower to low heat, cover and let simmer for 25 minutes.
- Add the seasonings and wild cilantro 10 minutes before removing from heat, after checking the salt level.
