Ingredients

1 piece(s) chicken (taparuca-gumarra) cut into pieces
4 piece(s) green topocho plantains, peeled and cut
500 gr yuca, peeled and cut
500 gr ahuyama (squash), cut into pieces
3 piece(s) green onion stalks
4 piece(s) wild cilantro
pinch salt, cumin and pepper to taste
Directions
  1. Cook the chicken with the onion and seasonings for 45 minutes, until it starts to soften.
  2. Add the plantains and boil another 20 minutes.
  3. Then add the squash and yuca, cook for 15 minutes, add the cilantro, lower to a gentle heat, covered, and keep for 10 minutes.
  4. Serve with ají and dry white rice.
