Ingredients
8 cup(s) water
500 gr smoked meat, chopped in small pieces
500 gr dried meat, chopped in small pieces
2 cup(s) washed rice
1/2 cup(s) cheese, cut in small pieces
2 piece(s) round onions, peeled and chopped
2 piece(s) scallion stalks, chopped
1 piece(s) large tomato, peeled and chopped
1/4 tsp ground cumin
2 tbsp oil
pinch salt and achiote to taste
Directions
  1. Wash meats very well, soak in cold water for 15 minutes, remove and discard water.
  2. Then cook in 8 cups water with oil, onions, tomato and achiote for 30 minutes (medium heat).
  3. Taste for salt, if necessary add a little more.
  4. Add rice and cumin, stir well and leave about 20 minutes until water evaporates.
  5. Then add cheese, stir, cover, lower to low heat and leave for 15 more minutes.
  6. Should be quite moist.
