Ingredients
juice of 2 lemons
2 cup(s) basic broth [see p. 304]
2 piece(s) ripe plantains, peeled and cut into pieces
2 piece(s) green plantains, peeled and cut into pieces
1 cup(s) guiso (Colombian sofrito) [see p. 319]
2 piece(s) ají criollo (Colombian peppers), finely chopped
1 cup(s) coconut milk (optional)
pinch salt to taste
Directions
  1. Put the plantains to cook in the broth, first the green ones, and after 10 minutes add the ripe ones.
  2. When both are soft (about 30 minutes) add the liver, guiso, peppers and salt; let cook 15 minutes more, pour the coconut milk on top and let simmer covered for another 10 minutes on very low heat.
  3. Serve with coconut rice.
