cup(s) guiso (Colombian sofrito) [see p. 319]

tbsp mustard
1
tbsp vinegar
2
tbsp sour orange juice
2
tbsp lemon juice
pinch salt, cumin and pepper to taste
Directions
- Wash the rabbit very well, rub with lemon juice, cumin and pepper and let rest for 1 hour.
- Grill over charcoal on a grate for 1 hour with low heat, turning until golden.
- Remove, cut into pieces and shred the meat.
- Bathe with the sour orange juice, vinegar and mustard.
- Heat the guiso and mix with the meat, let simmer for 10 minutes on low heat.
- Serve with cooked plantain (or yuca) and dry white rice.
