Ingredients
2 kg pork loin
4 piece(s) egg whites, lightly beaten
2 cup(s) crackers, grated
1/2 tsp parsley
1/2 tsp cilantro
1/4 tsp oregano
pinch salt to taste
oil
Directions
  1. Cut the meat into 10 portions, pound with a hand stone until very thin, while sprinkling with salt and herbs.
  2. Dip in egg whites and pass through ground crackers.
  3. Fry in hot oil until golden on both sides.
  4. Garnish with lemon slices when serving.
  5. Serve with white rice and red beans.
