Ingredients
1 kg purple corn (purple maize)
1 piece(s) panela
1/4 kg ginger
1 kg sugar
8 water
1 piece(s) cheesecloth (straining cloth)
Directions
  1. Wash the corn well and leave it in water (to soak). Preferably in the morning.
  2. Discard the water and wash the corn well, then grind it. After the corn is ground, strain it with a cloth.
  3. Then cook it with the 8 liters of water; when cooking it, keep stirring so it doesn't stick; remove it from the heat once it boils well. In the afternoon when it's already cold, transfer it to a plastic bucket or tinaja if you have one. The container has to be plastic because of the fermentation. Add the sugar and the ginger. The ginger must be crushed well with a stone or anything else.
  4. After having done all this, cover it with a cloth, don't cover it with a lid because it gets a bad smell; the cloth is so it can breathe.
